There is so much to see and do in South Africa that one would need a little more information. How much time have you got, for example?

http://ectourism.co.za will give you infomation on the Eastern Cape Province at the other end of the Garden Route.
Many parts of South Africa are best done by car, I agree. The roads are generally good and the area north of Cape Town in which you are interested is safe and very interesting.
I can unfortunately not comment on tour operators. My family and I have travelled extensively by road across South Africa, Namibia and part of Botswana but always on our own.
