I spent two months in Vence near the Riviera in the fall of 1997. So it will be hard for me to recommend what to do in one day. But first let me tell you of my friend, Jean Eric Garnier, who has an art gallery in Eze. What an interesting person he is! He seems just like a troubadour when he recites poetry for you. I liked his artwork and bought one of his etchings. If you meet up with him, tell him hello from me.
My favorite spots were Menton(see the Marriage Salon designed by Cocteau), Beatrice Rothchild's beautiful home at St. Jean on Cap Ferrat, riding on the corniches from town to town.
There are three of the prettiest and best known hilltop towns just three miles apart from each other and only twenty minutes from the Nice Airport. These are St. Paul de Vence, Vence, and Tourrette-sur-Loup.
