The areas of Firenze and Siena are of course the most equipped for apartment rental and B&B. The Tuscan landscape is not so wild and even if you stay in a farm (agriturismo) you are close to many small towns. The Tuscan country towns are usually built on hills, with narrow streets and old houses; nevertheless the car traffic is sometimes heavy and noisy, so maybe you could prefer to stay in a more quiet and relaxing place just a few miles out. San Gimignano is very nice, but in July you'll find there more Americans and Germans than Italians.
