Definitely reserve lodging in Rome BEFORE you go. Early Sept. will probably
still be packed solid with tourists, especially because of the Giubileo. P.S. If
you'll be travelling by train, prepare yourself for overpacked cars. Try to avoid travelling on Fridays (especially evenings) and Sundays (ditto) - that's when a lot of Italians # who work during the week in a big city far from their home town - travel home for the weekend.
As for your stay in Sorrento, I hope you're planning on visiting Capri
too. Although it's very touristy, it's also extremely beautiful, and provides stunning views of the ocean.
It's about 45 mins. by hydrofoil from Sorrento. The entire Amalfi Coast is stunning, my favourite towns - and IMHO the most beautiful - being Positano and Amalfi.
