When we visited Banff three years ago on a ski trip we dined at the
Buffalo Mountain Lodge one evening. The best meal of the trip. We started
with the
ROCKY MOUNTAIN GAME PLATTER (Air Dried Buffalo, Venison Ham, Smoked Pepper Duck, Game Pâté, Game Salametti, Mustard Melons and Cranberry Relish) We nibbled on these while sipping on a fine Australian Shiraz (whose vineyard's name escapes me) from an impressive wine list. Our main courses consisted of: 1. Seared Arctic Char on Spinach Linguini with a roasted Tomato and Shitake Mushroom Ragout. 2.Rack of Venison in Porcini Crust, Herb Spaetzle and Saskatoon berry Game Jus. 3.Medaillon of Wild Northern Caribou with Apricot, Blueberry Compote, Gratin Potatoes and Port Wine Reduction. 4.Roasted Pork Tenderloin filled with a Sundried Fruit Relish, Marsala Glaze and Dauphine Potatoes. The desserts were equally creative. Beautiful mountain lodge. All in all a fantastic evening. I highly recommend it.
