Sounds like your trip was very similar to mine and I agree with you on all counts. I really enjoyed Nyons as well. I was also fascinated with Uzes. Pont du Gard is touristy, but can't be missed as you say. I had the most fun in the small, quaint villages. I enjoyed the little train ride in Avignon, but other than that, the Popes Palace and garden, that was the extent. I thought Les Baux was incredible. The view from the very top was awesome. I like the Michelin green guide to Provence. It also included many little towns and often include maps.
