I haven't much personal advice since we have yet to travel the mainland, but I've checked my Greek Travel Pages (travel agent's guide from 1996 that was given to me). Despite what I said about us going without reservations, I don't recommend it for you for this trip. We go inMay, when the season is warming up. August will be busy, although maybe not as busy as in the islands. Also, if I travelled with a child, I would want more security about having a bed. We have stayed in domatias and pensions and have had wonderful experiences and met great people. But the accomodations are not deluxe as in hotels with pools, bars, etc. Depends on what you find necessary.
