Subject: Re: BAKED Spumoni and Tortoni
I forgot to say that the spumonias known in toscana are baked, so it qualify as dry pastry (are used also on ice cream, known also as meringhe) About Tortoni: there is a commercial kind of biscuit with a very, very similar name (probably for trade mark reason). These are made of integral wheat flour, little butter and little backing powder. They are L shaped and very rough in appearence. If they are the subjects then a reason for which are not exported is their low value (they sell for less than the equivalent of 2$/kg ) althought being dry can be easily carried and have relatively long (fifteen months ) expiring time. ARE THEY THE ONES ???
