good to hear from you. Morocco and Turkey have so much to offer I don't know where to start. In Morocco one concentrates more on the interior and cities, as well as their medinas (the old parts); less on beaches, but there are some good ones around Mohammedia, close to Casablanca.
Turkey is a different story. You can have both. The old Roman cities are all located at the Mediterranean; very historic and picturesque. Then there is Anatolia (Turkey's interior is huge) with places like Goreme.
Morocco requires at least 3 weeks, Turkey 4 weeks, depending on what you want to cover.
