Oh those were the days..Chunking mansion... For shoestring budgets and really nice rooms, I found the following place to be great and its not far from Nathan Rd. and the night Market area. Here is the info Kevin:

Salisbury YMCA is nice to but the Evergreen is much cheaper and just as nice at HK$480 ($US65) That was for the Supreme Deluxe Double. They go down in cost from there. If my memory serves me right, it was HK$315 for a single. MUCh, much, much, much better than chunking mansions. Just a little story about the infamous Mansions. in 1994, we went out in kowloon park in the early am to practice taijiquan.
