There are lots of options for organized day tours in Munich. Go to any tourist office (There is one in the main train station) to sign up. When I was there I took a day trip to Saltzburg (unorganized, so to speak, but the tourist office helped us buy a return-same-day train ticket and we got a nice city tour in Saltzburg). We also went to Eagle's Nest, beautiful views; Neuschweinstein (probably horribly misspelled, I don't have my notes with me); and Linderhoff castles.
