You can probably best see the tides either from around Digby NS or from the south New Brunswick area, http://www.nbfundy.com/web/english/main.asp The Hopewell Rocks area near Moncton is a spectacular example of what the tides have done over the years.

Don't forget a trip around the Cabot Trail before you go on the Ferry to Newfoundland, and up the coast of Newfoundland there are natural wildlife preserves and a large national park
