Could this be Il Molino, which is connected with a hotel called Palazzo Bocci? I verified the names through the Michelin site; it's been 20 years since I ate there, but when I grew up in the region we often drove an hour to Spello to eat there. The Pinturicchio was their specialty dish: meat with mushrooms in puff paste.
