The main attractions along Highway 1: Santa Barbara (lovely beach town with a heavy Spanish influence), Hearst Castle (you have to go there at least once), and Carmel/Monterey (I prefer the latter, but Carmel is much cuter). Each of those is a few hours drive apart. After Carmel/Monterey you can cut over to 101 north, then head east at Gilroy (don't miss the outlets!) to Yosemite. If you would like to stay in a less touristy beach town (unlike the aforementioned) and don't mind going a little out of the way to the north, there are some great areas just south of Santa Cruz--the people who vacation there are typically local residents who are getting away for a week.
