Our restaurant of choice in Rome was

Old Roman restaurant that specializes in the Jerusalem Artichoke and various fried specialties. Try the artichoke deep-fried (Carciofi Alla Giudia) - it is fabulous. The centers remain moist - the outside leaves, normally so tough, become crisp like chips. We shared Rombo (turbot) perfectly baked in white wine. Simple preparation, moist &delicious. The fried dessert choice was Le Palle di Nonno Fritto, a deep-fried ball of ricotta cheese and chocolate. Sounds weird but it was terrific. The service was excellent. Expensive - reservations a must.
