I found your insider's look very interesting. I think you're right
about the failure rate in the restaurant business. My son is a
bartender/waiter who has worked in the business -- in more casual
restaurants -- for the last 5 years. For the last two years he worked for
Houlihans in Phoenix. Well, he had a surprise when he went in to work the
other day. They'd closed, with no warning. Apparently, that's not
uncommon. I wish you continued success at Bertrand at Mr. A's. It looks
lovely :-)
