I would agree with the Vancouver suggestion. My bride and I
celebrated our 3rd anniversary there last year and loved it. We
live in Seattle but try to go to Vancouver once or twice a year. With
the exchange rate the way it is, it's like going on vacation at half
price.
We stayed at a superbly cool place called the Kenya Court. It's a B&B that runs about $100 US a night. It's a converted apartment house with three units. You get a 2 bedrooms, bathroom, kitchen, dining and living room that looks right out on Kitsilano Beach. It was wonderful. In the morning the world traveler owners (he was a doctor for UNESCO now retired--they have been everywhere and love to discuss it) serve an incredible breakfast in their rooftop cabana. Food is great but the view is even better. There is tons to do in Vancouver and we can highly recommend having your annivesary dinner at a fantastic restaurant named Diva at the Met. The tasting menu is to die for. And we were there eating for about three hours. A wonderful evening. And since I had told them it was our anniversary when I made the reservation, the manager and waiter were constanly checking to make sure we had everything we could ask for. They even bought us dessert and an after dinner drink to celebrate. We also attended a performance of a superb British farce in a nearby town at the Raymond Burr theatre. Yes, that Raymond Burr as well as an improv comedy performance in downtown Vancouver. Make sure to check out Granville Island. A shopping and dining paradise right in the middle of town.
