Callie Black pointed out the high quality of service in New Orleans and, especially, Galatoire's. Having been fortunate enough to attend a conference in New Orleans in November of 2000 and making Galatoire's part of my regular gastronomic route through the city, I will certainly second her comments.

Just out of curiosity--I noted the fact that the Berghoff's waiters, like most I encounter in Europe, are professionals who will serve you year after year. Isn't this also true of Galatoire's and the other major New Orleans restaurants?

If nothing else, this interchange underscores the importance of skill in a waiter to make you feel comfortable during dinner.
