Have you considered Cozumel? Pretty beach, lots of things to do (snokeling, fishing, bike riding, kayaking, wind sailing, scuba diving, horseback riding), a quaint little village square with shopping, and lots of friendly people. We stayed at an all inclusive through Apple Vacations and were quite pleased. In addition to spending time in Cozumel proper, you can arrange day excursions to Cancun or to see the ruins at Chichen Itze. Cozumel is a good alternative to some of the more crowded seaside locales, it's a low key kind of place rather than a party town. We stayed at Paradisus but there are a number of other good resorts to choose from.
