I have been last year in Western Sicily and really love it. I don't think you'll find any problem for accomodations even without booking, as in June it was pretty quiet. I can suggest you the Tonnara di Bonagia It is both hotel and apartment rental in a restored tuna processing plant, right on the beach and a wonderful restaurant. The town of Erice, on top of the mountain, is very interesting but because of the long road up and down it isn't very fit as a day trips base. I loved also Marsala, while Trapani was a bit too noisy. According to what you like to see, you can stay in Palermo one day or one week, but beware of the heavy traffic, congested access routes and limited parking. Last but not least, you'll eat remarkably well almost everywhere in Sicily.
