You might enjoy following a short pastoral or small town itinerary as a break between seeing Venice and Rome. I love big Italian cities, but I also enjoy getting away from my fellow tourists and seeing Italians who themselves aren't used to seeing American tourists everyday. If you are interested in taking any country walks in Tuscany and Umbria I recommend picking up a copy of Walking and Eating in Tuscany and Umbria by Lasdun and Davis. They include detailed directions and maps and good hotel and restaurant suggestions. Their book led me to wonderful places I might not otherwise have discovered. I especially enjoyed a visit to and a walk around the town of Norcia, and a walk in the Piano Grande (great plain) near Castelluccio, both in Umbria.
