I've heard of the Orient Express, which is a private, very expensive train,
which I think leaves from Paris. Perhaps you're referring to the Eurostar
and Thalys? They are partially owned by the French state railway, SNCF, so
they are quasi-private at best.
Otherwise, I've never heard of or seen a private train in France. As far as I know they are all run by the SNCF (Societe Nationale de Chemin de Fer Francais -- literally, French National Railway Company). Bons voyages!
