I can not consult you about the way to come to Greece from Turkey (I never
visited Turkey and it's not among my plans) but I believe it is very easy.
As for Greek islands: That period even the most touristic of them aren't crowded because the period is not anymore high season. Just returned from Santorini (one of the most touristic Greek islands) where I found the best situation: not much people, not empty of tourists.
In case your son wants to visit a place close to Italy, I propose Corfu. Ithaki is a very small island and I can't tell you what will be opened that period (off-season). Corfu is a bigger island, very beautiful, with much more places and sites of interest to visit. Archeological sites, the beautiful town, museums, monasteries etc. Note that Kerkira =Corfu in Greek.
