I envy your trip. I love traveling around the US but I have never had three months to explore it.
I have always said that if I won the lottery and could be a man of leisure that I would love to visit as many of our national parks as possible. They often highlight rare and wonderful natural features that cannot be found other places. Many also offer wonderful camping opportunities. You might plan your trip to spend more time in the western US where many of the top parks can be found - Yosemite, Grand Canyon, Zion, Bryce Canyon, Redwoods, Rainier, Tetons, Yellowstone, etc. You can learn more about them at http://www.nps.gov/parks.html
If you do plan to visit several national parks, buy a National Parks Pass for $50. It will save money on admissions.
As for food recommendations, I refer often to http://www.chowhound.com when I travel. Their bulletin boards are an incredible resource.
The weather should be very conducive to camping at the time of year you will be traveling. If you cannot find a hostel or place to camp, there are several inexpensive hotel chains that you will get to know well on your travels because you will see so many billboard advertisements for them - Motel 6, Red Roof Inn, etc. I have also found more affordable motels in smaller towns away from the interstate highway.
