I heartily agree with recommendations for Cambodia, Turkey, Peru, Argentina, and Chile. I am not a trained historian, but love trips including historical and archeological sites, and all of those fit the bill. I have not visited Jordan, although it is on my list for all of the reasons cited by Alan.
With two to three weeks, combine Vietnam with Cambodia. Vietnam is much more than what most North Americans associate with the war.
Peru has, of course, Macchu Picchu, but there are other cities and towns that are interesting. If you don't mind jungle heat, the Amazon is interesting. (I hated it! I hate heat)
