We were on the French Riviera this past September. I think you have some great recommendations but I would like to add the idea of staying in Nice. Specifically at the Primotel Suisse which is a simple hotel that advertises that it has some family rooms so you would have to check, but it is located is the most wonderful spot, just under the Chateau, literally across the road from the Bay and promenade (amazing view rooms available), and within a block of the Cours Salya with Nice's famous incredible food and flower market and cafes, and the old part of town with its windy streets, great shops and more restaurants. You could do a great deal of walking from there and not be bored. We saw lots of families and found the most amazing gelato place that was especially fun in the evenings. There is a bus system with many towns just minutes away (Villefranche, for example - a great town too). Trains station a bit of a walk from the hotel but felt doable to me so you could access other towns. We enjoyed Cannes also but just passed through. St. Tropez (off season) is one of our favorite places. There are some wonderful perched villages to see around there if you did not get to do that in the past (Grimaud, Ramatuelle, St. Paul de Vence, etc.).
