I would second John's suggestion to spend a half-day and make a little tour of the area around Chimayo. There is the Santuario de Chimayo, a religious shrine (actually a very small, adobe church), which purports to have a floor of spiritual, magical sand capable of healing illness, a la Lourdes. And Chimayo town has a small, humble artistic center of local weavers of traditional Indian tapestries.
Then by all means have lunch or dinner at El Rancho de Chimayo. This is a destination restaurant, so reservations are probably necessary. If possible, and the weather permits, try to reserve a table on one of the outside upper terraces. If you manage to time your dinner here at sunset, even better.
