I can't be of any help on Alaska but we did visit Cancun for 6 days
in 1992. We stayed right in the heart of Cancun but not on the beach
(there was a shuttle to the beach from our hotel). In my opinion,
that was too long to stay. While the beaches are beautiful, Cancun
itself is very touristy. All the typical American style restaurants
and many locals trying to sell time shares.
We took two daytrips while we were there and both were very nice. One was to Tulum and Xel-ha (pronounced 'Shell-Ha'). Be prepared for a scary bus ride there from the hotel - we were sure we'd hit another bus going the opposite direction! We spent the day exploring the ruins and snorkeling...very nice.
The other daytrip we took was a boat ride to Isla Mujeres. Able to walk around a smaller town and spend some more time snorkeling.
I've heard that there are resorts south of Cancun that allow you to enjoy the beautiful beaches without being in the middle of the toursity areas. That way you can have peace & quiet but you're still close enough to visit Cancun itself if you want more lively activity.
