Given that you live in Florida, you should have no problem with the summer weather in Italy! Rome is cheaper in July than May and June for hotels, so that is some consellation. We find Florence more crowded than Rome in the summer. Depending on what you want to see or do, I would make some museum reservations ahead, as others have already stated. You might want to rent a farmhouse apartment in Tuscany for the week instead of staying in Florence. There are loads of places to seach for them and you can find acceptable places that don't cost a fortune. Rent a car in Rome and drop it off in Florence on your way to France, after a week among the vineyards...
