I heartily agree with Candice. We live in salmon country (northwestern BC) and get totally swamped with salmon as soon as they start running--won't be long now-- right into early September--depending on the weather and water levels (we have a large number of fisher-friends). During the salmon runs we eat salmon several times a week and still have more than we know what to do with! The butcher in town smokes and vacuum packs them for a relatively small charge. We are planning on taking several fish with us to give to relatives in Holland when we go in September. They all LOVE smoked salmon!
