Actually, I think you would find either the Noordam or OOsterdam just fine. The Noordam is older, but I have never found that a problem.
Of the ports of call in the Baltic, the one I would not miss is Tallinn. The old city is certainly one of the best preserved medieval cities in Europe.
However, my choice of cruise ships for the Baltic would be the Windsurf. This is a small cruise ship, part sail, part diesel, several hundred passengers instead of several thousand, and can visit many of the samller Baltic ports such as Ventspils and Bornholm. We will be on the Windsurf in August.
Still, whichever cruise you choose, your only regret will be that you simply did not have enough time to see everything.
