As for must sees in France. My top "must-see" was Chenonceau in the Loire Valley. I had wanted to visit there since High School and it was just as wonderful as I imagined!
Another place we discovered was a region they call "Swiss Normandie." We, unfortunately, only stayed one night in this area so didn't get to enjoy it as much as I would have liked. It's roughly the area between the Loire and Normandy (north of Le Mans & Alecnon). We stayed at the Moulin du Vey in Clecy (about 30 minutes south of Caen) and really enjoyed our stay. The hotel was set right on the Orne River and there were places to rent canoes and paddleboats. Just a pretty area I'd like to explore more one day (and an area I hadn't really heard much about).
