You mentioned that you will be in Vancouver during one of the fireworks
evenings. That should be fun for your family. Unfortunately, you can't see
the display from the Bayshore Hotel but it isn't far from there to a good
viewing location. A word of warning, though. The fireworks evenings are
extremely popular and the crowds are awesome. Some people stake out their
viewing locations in the afternoon and that's not something you would want
to do, particularly since you are traveling with young children. Perhaps you
can talk to the Bayshore people and get their advice.
As to other things to do, if your family is up to it, rent bicycles at one of the places quite close to your hotel and cycle the Seawall road around Stanley Park. It's quite different from your shoreline in San Diego and it should be fun. By all means, as suggested by Amelia, take in the Capilano Suspension Bridge. It isn't very far from there to the bottom station for the gondola up Grouse Mountain. That's definitely worthwhile.
Granville Island should be fun for all of you. It has shops, craft places, theatres, restaurants, and, of course, a very colourful market with a lot of eating places. In the summer there are often performers who would appeal to the kids.
Vancouver also has some interesting museums. The Museum of Anthropology is a world class facility. Science World is very good and has displays that are "kid oriented". The Maritime Museum is very much worthwhile as well. I hope you will have an enjoyable visit to British Columbia. Bon Voyage.
