I can't say anything about Iberian, having never flown them, but we have flown BA to and through London a number of times and like their service. While living at San Francisco we flew from SFO and last year from Phoenix. We think the food is pretty good and the seating in coach not too bad (which is a form of praise for coach seating).
However, in flying back from Helsinki we had to change from Heathrow to Gatwick airports at London, and this is no fun at all. It takes up to several hours what having to collect your luggage, take it to the shuttle coach stop, ride on the motorway to Gatwick, then unload and then check in with your luggage and go through: BA does NOT check your luggage through.
We were gratified to learn that since last year BA has moved its Phoenix flights from Gatwick to Heathrow, which means next time we do HEL->PHX we can check our bags through and never leave airside at Heathrow.
All of which to point out that before you fly, make sure you don't have to change airports in the UK or somewhere else. If you do, and Iberian flies direct, it may be worth a certain level of poor service and cramped seating. A direct flight should be short enough to be endurable.
On the other hand, we once flew non-stop from SFO to Helsinki on Finnair, a flight only an hour longer than the flight SFO to Heathrow, and the seats were so uncomfortable we swore we would never again fly Finnair and would opt instead for even a five hour layover at Heathrow.
