My suggestion would be to buy the Paris Zagat, select the restaurants you like and then have your hotel concierge phone to see if they're open. In reverse, walk around with your Zagat in hand and when you see a restaurant that attracts you, look it up in Zagat and read the review.

I've done extensive restaurant lists in this forum but don't know if they were kept in any kind of file. However, I did not note (or know) whether they were open in August or not. It's Paris, you won't starve!

Lastly, I would visit some Paris tourist websites. They might address the issue of what's open or closed in the month of August.
