We spent some time in Collioure a couple of years ago and enjoyed it. One thing I'd suggest if you have a car is to drive a mountain loop road that goes from (I think) Port Vendres to Banyuls (I'm spending some time just south of you in Bellingham, and don't have my travel materials at my fingertips). I think it is featured in the Michelin Green Guide for Languedoc, so is not hard to find in the travel literature. In any case, the views from this road are nothing short of spectacular. It can be a little daunting in places, but is really one of the most rewarding vista roads I've ever driven.
My wife and I spent three nights in the Perpigna-Collioure area at a grape growing, wine making Mas in between the two. We enjoyed it very much and the people were very nice. If this is something that might interest you, let me know and I'll get the name and send it to you.
