I loved Arles and plan to explore the southwest more on another visit.

As far as classic, there is the Dordogne. I haven't been there yet but am considering a walking tour in the area. I would like to see some of the hilltop villages and the cave paintings such as Lascaux. (Only a replica is open, I believe but there are others). http://www.arachnis.asso.fr/dordogne/guide1.htm
Last year we spent a day in the Loire Valley visiting a few chateaux - Azay Le Ridea, Chenonceau, Villandry, Amboise and Le Clos Luce. As Lucy mentioned, the trains are very fast and efficient. Tours, for instance, is an hour from Paris.
