We found on an earlier trip that a good base for the south of France was Agde. It was a pleasant town in its own right but well connected by train to Arles, Nimes ... to the east and for example Carcassonne and Beziers to the west. We stayed in a nice hotel overlooking the river called La Galliotte.
On our last trip we stayed in an appartment in Paris and as well as exploring Paris found it a good point for going elsewhere in the country, including a day trip to Nimes by TGV. Being on a TGV line makes a big difference. You would need to be aware of where the TGV station was though in relation to the town and your accommodation. The station at Nimes is well located in relation to the town.
While we were in the Sarthe and Loire valleys earlier this year (with car) we thought Vendome looked a terrific town to have as a base for exploring the region and further afield by train. However I did note that the TGV station was a little way out of town and the travel to and from the station might be too much.
