With respect to your question as to how difficult is it to ride the Tube and the Metro with luggage, you will have no difficulty whatsoever in taking luggage on the London tube system, especially at the weekends. If my memory is correct, there are lifts and escalators at Waterloo, and I think a short flight of steps at Paddington up to the Express. However, many other stations are not so traveller-friendly.
As to Paris, I was there a few weeks ago at a weekend and while not carting luggage, it did not seem to be all that crowded on the Metro system. Perhaps some-one else can help on that question.
