I been to Nice twice and used it as a 'jump-off' city for exploring the region. If you like small villages, I'd recommend exploring the perched villages above Monaco. Eze is the most famous but there are many other small villages that are also beautiful. I really enjoyed the village of Peillon. It is very small. We stayed at the Auberge de la Madonne which had very good rooms and the restaurant was also very good. In the summer, we sat on the terrace and watched the sun set on the village. Peille and Ste Agnes are also very interesting villages in the area.
I also highly recommend Vence. It has wonderful shops, great art and great food. It is easy to get to from Nice. I stayed at La Rosarie hotel and it was very nice. I would think it would be a great place to shop for Christmas.
We spent a week on Corsica. It is about a 3 hour ferry ride from Nice and is very interesting. We stayed in Calvi and drove around the small hill towns. I can give you more information if Corsica interests you.
I haven't been here but if I was going to be in Nice again in November, I would go to Torino and Piemonte area of Italy. The truffles are harvested in late October/November along with other mushrooms. The wines of the area are also wonderful. Plus Torino is going to host the next Winter Olympics.
