I always take along a good book to read, CD player with music, and my own headphones to listen to the airplane movies, since the domestic leg of your flight, if you have one, charges you for earphones.
Also, a big bottle of water, some snacks (fruit and chocolate), and toiletries to arrive refreshed after a long flight.
The boredom can get to you, and I find it impossible to sleep. Just have a variety of things to do and take an occasional walk, as others have said, for circulation in your legs - it really is important!
