The best tip I have for jet lag is don't go to bed or take a nap when you arrive. Put yourself on Paris time. Go out and wonder around, have dinner. Try to stay up at least as late as 9pm (Paris time). I have heard of (but haven't tried) adjusting your bed and wake up times an hour a day to put yourself on Paris time by the time you leave on your trip.
If you've never been to Paris, the boat cruise is a good way to orient yourself. I've never done one at night but as Paris is the city of lights I'd think it would be dramatic fun.
