Re: Guilin. If you take the Li River Cruise to Yangshou, stay over a day in Yangshou and bike out and around the area - it's gorgous. Or sign up for one of the day tours. I went to a Chinese lesson and a Tai Chi session. I stayed several miles out of town at the Yangshou Mountain Retreat (www.yangshoumountainretreat.com) and would recommend it for a day in the countryside. You can take a van/cab from town.
Re: Shanghai. There is the regular tourist stuff eg: the Bund and the Gardens (you can spend close to a day wandering around wandering around Yu Yuan Gradens). Other things you may not want to miss: Madame Sun's residence, the People's Park and the new Cultural Center. I spent one Sunday morning at the English corner of the People Park, just talking with locals who wanted to improve their English. One of the best things about that trip. There is ferry service to Pudong. Several years ago, I did a day on the river - went downstream. Pretty muddy and not super interesting.
