We were in Provence last March and stayed for several days in Avignon at the Kyriad Avignon Palais des Papes- great location right on Place de l'Horloge opposite the Theatre- nice hotel, great beds, good buffet breakfast.
Best meals in Avignon: Restaurante Le Petit Bedon on Joseph Vernet (great meal, simple but elegant decor and service), and La Grille which is right next to the hotel.
Best restaurant in our 4 weeks in Provence: in Arles, Restaurante La Paillotte, on Rue du Dr.Fanton. We had lunch outside on the terrasse, and was so excellent that we returned the following day. Things to see: apart from Avignon, which is walkable, lively, great sights; definitely visit Arles, Les Baux(audioguide is excellent), Tarascon(chateau closes at 4:15), Pont du Gard(awesome Roman aqueduct). If you find yourself in Carpentras, which is a very old small town (huge market on Fridays) we stayed in a lovely hotel, Hotel du Fiacre, an 18th century mansion. Our room(#14) was huge with high ceilings and french doors opening onto the inner courtyard. Hope this is helpful,
