You come from one of my favorite parts of Spain. When my children were little we spent a month in San Sebastian. What wonderful memories.
I spent several days in Venice last June. I stayed at Hotel Zecchini in Venice. The Hotel is not particularly noteworthy except the location. It is in Canareggio very close to the Ferrovaria and all the Vaporettos. A day card on the Vaporetto is E10 which permits you to get on and off as often as you like. I believe the card also permits you to take the bus from the airport which is a E2.50 ride and drops you off by the Ferrovaria (Main train station) Venice is quite small and very walkable. The Vaporettos stop at all the main sights. Notable restaurants were Taverna San Trovaso, Fondamenta Priuli 1016 Tel: 041-520-3703 it is right by the L'Accademia in a small alleyway by the canal. The food is outstanding. A wine bar on the same Street further down Vini al Bottegon Cantinone San Trovaso 992 they have lots of little snacks to eat and great wines. In Cannareggio I stopped for some wonderful wine and tramezzini and chichetti (Venice's answer to Tapas) Near San Marco I ate at Osteria Da Carla, San Marco 1535 It was good, I had cuttlefish with Polenta. My main objection was that the portion was very small.
Florence, don't miss Galleria dell'Accademia with the Donatello's Maria Maddalena right across from David. I have no hotel recommendations since I have always stayed in an apartment there. Other not to miss sights are are Capella Brancacci which has a fresco cycle by Masaccio that were completed by Filippino Lippi. Also Convento di San Marco with frescoes by Fra Angelico. He painted each cell, this is also where Savonarola lived. There is so much to see and do in Florence. Palazzo Pitti, Uffizi the list goes on and on.

Rome: I am not familiar with Hotel delle Musee, but know it is not in a very convenient area for sight seeing or public transportation. It is a bit far from the center. Not to miss; Villa Borghese you need to make reservations. The Vatican museum and St. Peters walking around the Forums, Santa Maria della Vittoria which has statuary by Bernini of Extasy Sta. Theresa of Avila it is by Largo sta. Susanna.
