I've been to Hong Kong twice - each time about 5 days - and just love it. It's a blast!

The Mandarin Oriental is in a very good location. I also highly recommend the Grand Hyatt or the Shangri-La.

Must see's are a visit up to Victoria Peak, Hollywood Road (antique shops, interesting street), the aviary next to HK park and shopping at Stanley Market. Stanley Market is HUGE and a bit out of the way, so plan on taking a good chunk of time there. Also, take the Star Ferry across to the Kowloon side, have a walk through the famous Peninsula Hotel and go to the jade market.

Some of my favorite restaurants are M on the Square, Bamboo, Grissini's in the Grand Hyatt as well as having a glass of bubbly at the Champagne Bar at the Grand Hyatt. For a Dim Sum lunch, go to Tsim Sha Sui on the Kowloon side and go into the Princes building. Upstairs is a terrific dim-sum place.
