sorry, can't say nothing about skiing and not much about Chamonix concerning hotels and so on....
Only one thing: If you want to go up to the Aiguille du midi (sp?) consider your "health" situation. I was going there in my mid-30s and never felt that old like up there. You start in Chamonix at about 1100m I think and within 10 minutes you are on 3500m (for feet, multiply with about 3). Very hard for many people. If you fear troubles, make at least a break in the middle where you have to change cabins.
