I've been there in the autumn of 2001. I stayed in Hotel du Grand Balcone where Saint Exupery lived during few years. I was able to book this room. From your window you can see the central square with Opera and Town Hall. The hotel is not very expensive, because it's a bit old, but still clean and nice. Tel. 33(France code)+561214808.
Toulouse is a wonderful town for one day walk. Don't miss a free visit of Town Hall and a visit of Hotel D'Assezat (rich museum of paintings).
Not far from Toulouse you can visit a real must - the town of Albi with one of the most unusual and beautiful Cathedrals and the world-largest museum of Toulouse-Lautrec paintings (he was born there).
On your way to Provence you can also visit the wonderful Carcassone and Narbonne.
