I will leave it for others to comment on the drive in Victoria but north from the New South Wales border through to Queensland is an area I am familiar with.
Firstly the Princes Highway (Highway number 1) is not the main route between Sydney and Melbourne. Most of the time there are only two lanes of traffic, no divider, it is long and windy. It has a high accident rate! You need to make sure you stay alert and don't try and drive it when you are tired even if just to make it to a particular destination!
The following are the towns between the border and Nowra : Eden, Bega, Bermagui, Tilba Tilba, Moruya, Batemans Bay, Ulladulla, Jervis Bay then Nowra. - Eden (Twofold Bay) was a whaling port. - Bega is dairying country. - Bermagui was made famous by Zane Grey who fished from there. At Bermagui there is a terrific salt water pool (The Blue Pool) - it is in the rocks and the sea is just across the rocks - definitely worth a dip. Here is a picture: http://tinyurl.com/5jq44 - Tilba Tilba is a heritage town - very pretty, famous for its cheese. - Moruya - good fish and chips from the Air Raid Hotel in town. - Batemans Bay - my home away from home - the closest point on the coast to Canberra - it is pretty.
