Alex has some excellent suggestions. Collioure (just across the French border) is a lovely beach town, full of galleries & ateliers. Do walk on the beach at least far enough to see the monument to the deportees of 1493 - a reminder of the tangled and tragic history of the area.
If you have a car, another destination is Ceret, in the hills above Collioure. Here there is a wonderful contemporary art museum, founded by Picasso & friends, and featuring a good deal of art work that was done right in the area. There are pleasant small places to eat quite near the museum, and the drive is beautiful..
